I Am So Sorry...

How could I?!?!? How dare I?!?!? Please, please, please forgive my oversight! Christmas is never complete without Brian's specialty, made from scratch, red velvet cake. This year he made not one but TWO and I forgot to give him credit in my last post. Then, just last night, he made sure he had all the ingredients to make cake number three! I mean we have really scored this year! If you have never tasted Brian's red velvet cake, I can only assure you have missed out. It is a recipe handed down from my late Aunt Veneta. The cake is thick, delicious, but it is the icing that takes it over the top. He first cooks a mixture of ingredients, lets it cool and then blends it with the remaining items. It isn't heavy like buttercream nor as light as cool whip and doesn't have any cream cheese in it. The taste is so heavenly I can overdose without even considering how many pounds it is costing me.

  1. Brian's cake looks beautiful, and I'm sure it is yummy. Why, after all the Christmas feasts, does food still look so good? Oh, well it is the season to be jolly (I'll wait until next week to get on the scales).

  5. Now that is one cake I know I could eat. No chocolate involved. I am with Carol, gotta go before I start drooling. Ooopps! Too late!!! I think I need a piece of that cake. Just what the doctor ordered. :D

  7. Von de Leigh - Brian loves to cook and this cake is just one of his many specialties.

    Jolene - there is a small amount of cocoa in the cake. Don't know if that affects you adversely or not.

    Linda - I don't know if I can twist his arm hard to enough to make that many. LOL I do wish, however, that you could have a taste. :)

    Ronda - Brian said he will be busy working on the tent and regrets he can't bake you a red cake. LOL Furthermore, if he did bake one, I'm sure it wouldn't get as far as the tent. Paula and I would kidnap it. Hey, the ransom might be an idea for camp meeting offering. LOL

    Mark & Debbie - like that picutre, huh? LOL We don't care what it looks like, we just want it! LOL I hate to tell you this, but the third one was the very best.

  13. Abigail - It is nice to hear from you. The red cake is my absolute favorite and Brian made another one last night. Ummmmmm goooood. The pic is not of this year's cake. For the first time ever, he did not make it in three tiers this year. He has made red cake for Christmas for the past 25 years and he always spends a painstaking amount of time icing the three tiers. He puts it on a crystal cake stand and it is a work of art. I convinced him it would be just as good in a one layer and it wouldn't take him so long to make it. That is why we got more than one cake this year. He would never give in to anything less than three tiers. I will be posting the recipe soon.
